Baked chicken nuggets

This is a much healthier alternative to fried chicken nuggets. Serve with your favourite dipping sauce, in a burger, or on top of a salad.

Ingredients

  • 1 x egg, beaten
  • 1 x cup milk (if you have buttermilk handy, this is even better)
  • 2 x chicken breasts, cut into slices approximately 1 x 2 inches in size depending on the size of your chicken breasts
  • 2 x cups of panko bread crumbs (I prefer using panko, but any other breadcrumbs will work fine too)
  • 1 x teaspoon smoked paprika
  • 1 x teaspoon black pepper
  • 1 x teaspoon salt
  • 1 x teaspoon rice flour

Method

First, add the egg and milk into a large bowl and whisk lightly. Add the chicken pieces to the egg and milk mixture to soak for about 20 minutes. This helps tenderise the chicken.

In a large baking dish begin preparing the panko breadcrumb mixture. Add the panko bread crumbs, smoked paprika, black pepper, salt and rice flour to the baking dish and mix through so all ingredients are evenly distributed.

Pre-heat your oven to 180C. Line a baking tray with baking paper, and set aside.

One by one, carefully dip each chicken slice into the panko bread crumb mixture, coating all sides of each chicken nugget. Once coated with panko bread crumbs, arrange each chicken nugget on the lined baking tray and bake for approximately 10 minutes, or until golden brown.

I like to serve my chicken nuggets hot with sweet chilli sauce or garlic aioli.
